What’s For Dinner?



Successful menu planning can sometimes present us with a problem.  We want our day–to-day meals to be tasty, healthy, attractive and at the same time, quick and easy to assemble and cook.  If one has some time in the evenings or over the weekend to cook and refrigerate and/or freeze, that can be very helpful.  For instance, all in one Sunday afternoon you could make two meatloaves, one to eat during the week and the other to freeze, several pounds of meatballs and make up raw hamburger patties, which you freeze on cookie sheets until hard and then slip into a plastic bag, to be defrosted and cooked when needed, At the same time that the meatloaves are cooking you can roast a chicken and marinate a flank steak.  A large vegetable Lasagna could be divided into a weekday main dish and a future meal. Right there, you have a week’s worth of meals and several for the future.

 Recipes for soups can be doubled, one part to be eaten during the week and the other half frozen. Blintzes freeze well and are always a welcome addition to a meal, be they cheese, potato or fruit.  Stews also freeze well and of course, it is always nice to be able to pull a homemade cake, cookies, mandelbrot or rugeleh out of the freezer for company.  Remember to always seal your frozen foods tightly and date and rotate them so that nothing gets tucked away in a corner and forgotten.

Assuming you have the necessary ingredients at hand, here are a few quick and easy meal ideas:

Cold store-bought Borsht with a dollop of Sour Cream
