Carmel-Crunch Matzo Dessert

5 matzo
2 sticks unsalted butter
1 cup light brown sugar
12 ozs. white or bittersweet chocolate, grated

Place matzo on cookie sheet lined with aluminum foil. Melt the butter, add the brown sugar and stir to mix. Whisk over low heat until they mix to form caramel. Pour over the matzos and spread evenly. Place in 350º oven and bake for 6 minutes, until caramel has soaked into matzo and bubbles. Remove from oven. Dust with chocolate. As it melts, spread evenly with a spatula. Can be sprinkled with toasted almonds, if desired. Cool completely and break into small pieces.
