Poppyseed Honey Cake

1 cup honey
¼ cup each of butter and oil
1 tsp. vanilla
2 eggs and 2 egg whites
2 cups whole-wheat fine flour
2 tsp. baking soda
½ tsp salt
½ cup buttermilk
1/3 cup poppy seeds
1 banana, mashed
½ cup raisins

Cream honey, butter, oil and vanilla until fluffy. Add whole eggs and whites, one at a time. Sift together flour, baking soda and salt. Combine buttermilk, poppy seeds and banana. Alternately add dry ingredients and buttermilk to honey mixture. Stir in raisins and turn into a greased and floured 10” tube pan. Bake at 350º for 50 minutes.
