Mock Crab Cakes

1 lb. haddock fillets
2 lg. eggs
¼ cup mayonnaise
1 tsp. dry mustard
½ to 1 tsp. Old Bay seasoning
½ tsp. Worchestershire sauce
¼ tsp. pepper
½ tsp. salt
½ cup matzo meal (or bread crumbs)
oil for frying

Poach fish in one layer in large skillet. Simmer about 10 minutes, covered with water. Remove with slotted spoon, drain and cool in refrigerator. Flake into ¾ inch chunks. In large bowl, beat all ingredients except matzo meal until well blended. Mix in matzo meal. Add cold haddock pieces and mix gently, so as not to break up the lumps of fish. Form into patties, using about ¼ cup for each. Heat oil in frying pan and brown on both sides. Makes 10 mock crab cakes.
