Bubbe’s Stuffed Veal Breast

Have the butcher cut a deep pocket in a large breast of veal. Stuff it with your favorite stuffing mix. Fasten closed with toothpicks or metal skewers. Dust veal all over with garlic powder, flour and paprika mixed together. Place in greased roasting pan. Roast uncovered at 325º for 25 minutes per pound. It is also nice with an apple stuffing made with 2 cups soft bread crumbs or bread that has been soaked in water and squeezed dry, 1 large onion, diced and sauted in 3 T schmaltz, 3 cups chopped apples, ½ tsp. salt all combined.
