Chopped Liver 

1 lb. chicken livers
¾ cup onion, chopped
3-4 T chicken fat (schmaltz)
3 hard cooked eggs
salt
pepper

Sauté onions in half of the chicken fat until golden brown. Broil the livers quickly, not letting the edges get hard. Add them to the schmaltz and cook for an additional few minutes. Let mixture cool. Grind, chop or blend with the eggs in a food processor, until well mixed but not mushy. Add salt and pepper and more schmaltz until it tastes right. Decorate with radish roses, parsley and hard cooked egg rings. Makes about 2 ½ cups.
