Matzo Brei (Gefrishta Matzo)
Break 3 or 4 matzo in pieces and pour boiling water over them in a colander until they soften. Beat 3 or 4 eggs with a little salt. Melt lots of butter in a frying pan and add matzo, stirring to break up further. Pour beaten eggs over and scramble until dry, but not too dry. Serve with more salt or your choice of honey or maple syrup.
