Duck with Fruit Stuffing

2 cups grated apples
15 large prunes, pitted
4 T breadcrumbs or matzo meal
1 egg, beaten
1 T sugar
dash of salt
dash of pepper
4 lb. duckling (approx.)
garlic powder
flour

Sprinkle duck inside and out with garlic powder. Combine rest of ingredients except for flour and stuff into cavity. Dust duck lightly with flour. Roast breast side up on a rack in a roasting pan at 325* about 30 minutes per pound, until nicely browned. Serves 4-5
