Apricot Dumplings in Potato Dough
A sweet side dish to accompany meat or chicken
1 egg, slightly beaten
1 cup mashed potatoes, cooled
Enough flour to make a stiff dough.
Fresh, canned or dried apricot halves
Combine egg with mashed potatoes. Work in enough flour to make a dough
stiff enough to pat or roll out on a lightly floured surface. Place
apricot half in the center of a flattened piece of potato dough and bring
the edges up, pinching together. Turn upside down and place on a greased
baking sheet. Bake at 350* until brown.
