Emma’s Potato Pancakes (Latkes)
4 medium to large potatoes
1 touch of grated onion
Grate potatoes, drain water and grate in a little onion. Beat egg
and salt and about 2 T matzo meal; stir well. Fry in very hot oil. Drain
on paper towels or brown paper bag. Serve with applesauce or sour cream. Makes
12-14 latkes. You can substitute sweet potatoes and add more onion and
1 tsp. sugar and ½ tsp. cinnamon.
