Vegetable Fritters with Sour Cream
½ tsp. salt
4 T flour
2 cups of mixed cooked vegetables (no beets), well drained and cut tiny—not
1 T lemon juice
1 tsp. onion, grated or onion juice
4 T shortening
1 cup sour cream
Beat eggs, salt and flour until thick. Add vegs., lemon juice, onion
and blend. Drop from a spoon into hot melted shortening and fry until
brown on both sides. Place in a casserole and cover with sour cream.
Bake 10 minutes at 350º. Serves 4.
